Everybody knows, the most delicious fish soup is the soup, boiled in a
pot on the open fire. It was surprise for me, that the delicious fish soup can be cooked at
home. The secret is simple - cook the broth for two hours, and do not cover the
pan.
2 heads of salmon
1 salmon steak
4 potatoes
2 onions
2 carrots
4 bay leaves
1/2 tbsp. peppercorns

1. Wash the
heads of salmon, remove the gills (necessarily, otherwise the broth will
be cloudy). The scales can not shoot - it will be dissolved in the process of
cooking. Put the heads in 3-4 quart saucepan, add 1 whole carrot, 1 onion, bay
leaves, pepper, cover with water. Bring to a boil, turn on low heat and cook
for at least 2 hours. Do not cover the pot in any case! Surprisingly, but it is
the fact, these conditions are needed in order to cook a delicious fish soup. Do
not be discouraged that broth will be evaporated by one third. The main thing
for us is not the volume of, but the quality of the product :)
2. Strain the
broth through a sieve. Heads, vegetables and spices thrown away. Put in
the pot the broth, large chunks of steak, coarsely chopped potatoes.
3. Make
sauteed mixture. Onion finely cut, carrots to rub, fry in olive oil until
transparent. Put in the ear. Add salt to taste. Boil until potatoes cooked.
4. Put in
the plates with soup sliced tomato, and garnish with chopped greens.
