Dorado baked with rosemary and lime

4 small fishes
1 lime
4 sprigs of rosemary

Clean the fish, separate heads, cut abdomens along the anal fin and remove the insides. Make the two sides of the fish three transverse incision. Salt fish, sprinkle with lime juice, put the rosemary from the top, from the sides and in the abdomens of fish. Bake in pre-heated oven for 40 minutes.

In fact, it would be enough 20 minutes to bake the fish. But I love to hold the fish in the oven longer. Dorada enough oily fish, so I am not afraid of it overdry. But in the long cooking a fish appears a light aroma of smoked.
